Mine are a light beige and they seem to do the job well. Plus the beige is soft on the eyes and pleasant to the customer.

I'd kill myself if I had to work in a black studio, so I painted the walls white and use sheets of black/white foamcore and black velvet when I need a less reflective space.

Medium gray. I couldn't do black as it would be far to depressing. White would be my first choice, but when I moved into my space, they were already medium gray. So I left them and I like it. Easy to make them dark by controlling the stray light, yet still a nice place to work in.

A quick easy solution if you don't want to paint your walls black is to put up some black out cloth blinds around the room. That way if you're spending a lot of non shooting time in the studio, you don't feel like you're living in a cave.

Well I'm renting a room and it's got eggshell walls and red carpet. I'm always reaching for the white balance to remove magenta casts. Sigh. I'm not in a position to choose but I'd prefer it darker (and with wood floors) but I've no choice currently...
Black cloth sounds like a good way to go though. I assume it would need to be fireproofed though in commercial buildings for insurance though.
