Auto-Adjustments

Does best-practice dictate that I turn this off and save a new default ACR setting before I adjust any images?

No. If you edit the image, you can overrule any auto-edit that you don't like anyway. If you find that auto-edit does a decent job, by all means leave it on. If you find it makes the average image worse and you have to overrule it each time, than it makes more sense to turn it off.

I gave the auto settings the old college try.

Turns out I didn't like the unpredictability, and finally ended up setting all the sliders to something I could expect every time I opened an image. Then I tweak them as needed.
