My Mac is set up with both OSX - Leopard and Vista 64 bit. I can boot into either operating system. I use OSX for just about everything because it is just a smoother running operating system. For those very few applications that do not have a Mac version, I can boot into Vista to run them.
To keep your PDFs sharp, select no compression, high quality (do not down sample) for images in the PDF setting dialog box. The following is from InDesign's PDF export:
