I am going to have to copy around 500 old, old photographs. Anybody have a suggestion to which software to use? I need it to repair cracks, spills and whatever else one could think of. Price is not an object.

Can't think of anything which would be more powerful than Photoshop, unless it would be a dedicated software product just for the purpose, (which, of course, I'm not aware of).
People most often do that by hand. I know of a fair number who charge good money to restore old photos for people. I don't know of any quick and simple software to do the job.
Somewhere there should be a manual for the software on line. Let me know if you can't find any details and I'll see if I can get the manual back from the friend of mine who has my V750 scanner which came with the software.
I have used digital ICE for photos and I spent more time going back and "fixing" what the digital ICE did than I would have spent "fixing" the photo myself. It did ok in the area of faded colors but as far as bends or rips, it just did not do a very good job. Over the years we have tried every way to shorten the clean up and repair process and at the end of the day we always seem to go back to what works the best, doing it by hand with PhotoShop.
I recently bought a used epson scanner with an auto feed to copy 20,000 3.5 x 5 and 4 x 6 photos. Hand scanning about 1000 5x7 and larger old studio photos as well, all into Photoshop. One piece of software that I recommend is Digital ROC from Kodak: Kodak's Austin Development Center - Photoshop Plugins & More!
The job is labor intense. Do it while you are working on non-processor intensive things. I have completed about 6600 images and think the scanner is burning itself out. For what I paid, however, I did receive my money's worth.
