Yes you can, with some provisos. Firstly, you need to scour the internet to make sure that the lens you wish to use will clear the internals of the camera. In particular, some lenses interfere with the mirror on the 5D, and there may be some lenses that won't work at all because their rear elements extend too far into the body to allow normal operation.
When you attach a non-canon lens to your Canon camera, you lose a couple of things: Autofocus and Open Aperture metering. In reality, I don't find this a big problem for a wide-angle lens, and I've found that focussing my Olympus 21mm at 3 metres and an F stop of F8 delivers very good results on the 5D.
Adapters are available from multiple sources. Generally, you get what you pay for, and the cheapies on ebay are of variable quality, I certainly had no luck with them, but others have. The issue is that a small error in the thickness of the adapter may mean that infinity focus is not possible. On the other hand, focus-confirming adapters have started popping up on ebay that trigger the camera's focus indicateor when you have (manual) focus on the selected focus spot.
The loss of open aperture metering is a minor inconvenience to me. I generally have adequate light to leave the lens stopped down to F8, and plenty of time to make my shot.
