Just to add my two cents. I swear by Photo Mechanic for sorting and re-naming my files. Aperture is a great RAW processing program, but way too slow for sorting images. The first thing I do is put all the images in a 'camera' folder, and then re-name them with a slug. Once you've re-named the files, make your selections, and copy (NOT MOVE) them into a working folder. If you're using a combination of RAW and JPG files, open the folder in the Finder, set it to sort by file size so that that the larger RAW images will be on top of the smaller JPG's, and then skim those off into RAW folder. I use Aperture for RAW images, and some pre made Photoshop actions for dealing with JPG's. Once you've finished your RAW work, output the RAWs as JPG's back into your working folder, and there you go.
As for caputure dates, get some tethering software, hook the camera up to your computer, and sync the camera's time with the computer's time. That way all the cameras will have the exact same date. Oddly enough, camera clocks aren't that accurate, so if you have 3 cameras, you might find yourself syncing the camera time every couple of weeks. This is really a critical part of any multi-camera workflow.
