Are you building a matrix based or LUT based profile? For LCDs you need to be sure to build an LUT based profile. I'm not familiar with your software/hardware bundle, but if it's professional quality there should be a way to choose which kind of profile you are building.

No choice on LUT vs matrix that I've seen. I bought the EyeOne Display 2 because Bill Atkinson is using that for his LCD. I don't know if he uses Eye One Match though.

A while back I switched from Eye One to Monaco Optix XR-Pro at color scientist Karl Lang's suggestion. The reason for the switch is that the XR-Pro software lets you choose LUT based profiling and also lets you set the amount of 3D gamut compression. It was expensive to switch but I've never regretted it. My soft proofing with my 30 inch ACD is dead on as compared with my print output.
Before you consider switching like I did you might contact Gretag Macbeth tech support to ask whether LUT profiling is an option with their software. It should be in there somewhere.

But watch out - feed Canon DPP a LUT-based display profile and it will unceremoniously CRASH!
I do not have an Apple Cinema Display - only a "lowly" NEC 2070NX, and Eye One Match works very well, causes none of the problems you're having. I have a feeling there is a specific interaction between Eye One, the Apple Cinema, and possibly your video card.
