sharpness as seen in LCD

Hello all;
Still getting used to my 1DSMKII. If I set my sharpening in camera to 2-3 will the image in the LCD be viewed with the sharpening? If I then bring that RAW file into a converter, may I then strip the sharpening off the image or that I had added in the camera? I am mostly interested in applying the sharpening to the LCD and not particularly to the final image. Thanks.
